When planning trips to new locations, thinking about where we will get coffee in the morning is not on the list of things we consider. Sure, we hope there’s somewhere nearby that serves a decent coffee but if not, that’s OK.
However, we do remember if the places we visited had good coffee or not. For instance, almost everywhere we went in Australia had decent coffee. In Japan, unless we can find a Starbucks, we’ll stick to the canned coffee from a vending machine.
In Iceland, we didn’t have much choice about where to get coffee. Our hotel in Reykjavik had good drip coffee at the breakfast buffet included with our room rate. Once we got away from the city, the coffee served in the morning at our guesthouses was mediocre at best.
However, that’s when one of the hotel staff told us about a place that served fantastic locally roasted coffee. We had passed it earlier in the day and weren’t heading back in that direction until the end of our trip.
We made sure to stop in Vik on the way back, which is convenient because there’s also a huge gift shop and several gas stations. Even putting the location into Google Maps, we still thought we made a wrong turn off of Ring Road. We got to the end of a gravel side street and saw the Yellow School Bus.

We headed to the back of the bus where the coffee bar was located. We had checked out the menu online beforehand and knew what we wanted. Still, there were a few options to consider.
Instead of coffee, Sharon went with a Hot Chocolate with the works while I ordered a Flat White made with the Skool Beans roasted locally in Vik.
Both drinks were wonderful. We were also hungry from driving all morning so we each ordered a bagel. Sharon’s is with cream cheese and I went with peanut butter (which in hindsight, wasn’t a great choice on a toasted bagel.)
The inside of the bus was so cozy. There are plenty of books around the bus to read and some blankets if it gets too cold. 
We must have looked chilly because they threw another log into the fireplace for us.
We’d totally hit up Skool Beans for breakfast if we were spending the night in or around Vik. Unfortunately for us, it was just a stop during our longest drive of the trip. It’s a shame we drove right by on our way east because there are so many things on the menu I’d like to try, not to mention the Tea Lab.
